揚げないささみのフライ(Chicken Tenderloin Cutlet)

今夜は特売品だったささみを使ってフライを作りました!間には梅肉と大葉をを入れ、サラダ油を少量足したパン粉を使ってオーブンで焼き上げました。揚げ物をするのがあまり好きではないので最近はオーブンを使う事が多くなりました♪ヘルシーなのでいいですよね。揚げ油の後処理も面倒ですし・・・。副菜には微妙な量残っていた小松菜、もやし、人参を使った簡単な炒め物と白菜の浅漬けに玉葱のスライスを添えた簡単サラダを!お味噌汁と麦ご飯で美味しく頂きました☆

I had some chicken tenderloin in the freezer that I had bought when they were cheap, so I made  a sort of cutlet without using much oil. I first folded  some pickled Japanese plum paste, fresh green perilla leaves, and a bit of mayo between chicken slices. I then powdered the chicken pieces with flower, dipped them in the egg, and then rolled them in the mixture of bread crumbs and  vegetable oil. I threw them in the oven for 15 minutes or so at 170 degree c, turned the chicken pieces over, and then another 15 minutes until they are golden brown. I served them with some salad on the same plate. I also made some stir-fry with left over carrots, komatsuna (Japanese mustard spinach), and bean sprouts. I also had some pickled pickled Chinese cabbage, so mixed it with some finely sliced red onions. Cutlet usually involves deep frying, so this is a nice alternative to cut a bit of oil consumption. All dishes went well with miso soup and steamed rice!!

*3合のお米を大3の麦と一緒に炊きました。
*I steamed 450g of rice with 3 TBSP of barley. I usually freeze the left over rice for later use.
