I enjoy pilafs of all sorts, but curry flavor definitely is one of my favorites! It's a popular lunch menu at cafes here in Japan, but it's bit tricky to make because I don't like using a lot of oil or cooking anything that sticks to my frying pan. I found a recipe to make the whole thing in the microwave, so this was perfect for lunch today.
Wash the rice in microwavable bowl, and then add water and other ingredients with a ★ (star) next to it. Mix it a bit and leave it to settle for about an hour. Chop veggies of your choice while waiting, and then add them to the rice and seasoning mixture. Cover it with a lid or microwavable wrap and throw it in the oven for about 7 minutes (500W). Take it out and mix it lightly, and then throw it back in the oven for another 3-4 minutes. Leave the bowl covered for another 10 minutes, mix it a bit, serve it on a bowl, and then garnish it with some chopped celery leaves.
